I happened upon this recipe (don’t remember where) but we eat it every week or two- either on a salad or making our own version of KFC™ bowls. I hardly eat any fried food, but this is the best! Here is all you need to do:
Pour oil in round skillet and heat on med-high heat until hot. I do not measure oil, just put in enough to almost cover chicken (3/4 inch.)
While oil is heating, mix 2 eggs into a large plastic baggie or bowl. In another bag or bowl mix 1 cup of flour, 2 T. of garlic salt, and 1 T. pepper.
Cut up chicken or use whole chicken breasts and dip in egg mixture first and then into flour mixture. Place into hot oil carefully and cook until browned. I stir it about every 5 minutes to make sure all sides are getting cooked evenly. It takes about 20 minutes until chicken is done. Be careful when working with oil, as it has a tendency to spit at you!
When done, spoon out with a slotted spoon and place on plate with paper towels to soak up any extra grease.
Place on a salad or if you want to make a KFC™ bowl imitation, put on top of mashed potatoes and sprinkle on corn, cheddar cheese, and gravy.
